I’m a great example how overeating does not make you fat. Only wheat products makes me gain weight but eating whole food vegan does not. I rarely do fake meats and cheeses. I can overeat and stay in great shape but my digestion will hate me and it shows as pimples on my face or acid reflux. Raw foods gave me a different experience and thankfully, I was bold enough to try it to experience it for myself.
On raw, I got down to my lowest, but still healthy, weight ever. Still, that was not enough for me to stick with it. I had been dealing with acid reflux for months. I woke up and prepped my lunch for the week. I had a little left over so of course I decided to eat it because why use a whole new container for such a little bit of food. So, I was having seasoned Japanese sweet potatoes for breakfast. Then, I washed it down with carbonated water. I probably downed a whole 32 ounce bottle of that before lunch. For lunch, I had what I had made that morning which was Japanese sweet potato, topped with fresh cilantro and a side of chickpeas sautéed in Mustard and Turmeric Oil (here’s the recipe):
- 1/4 cup extra-virgin olive oil
- 2 Tbsp. mustard
- Curry powder
- Chili powder
- Coconut aminos
After a long day of work, I wanted to eat to comfort myself and congratulate myself on making it through the day so I had an entire pack of seaweed snacks and then more Japanese sweet potatoes with curried chickpeas. I could feel the acid building up and my belly feeling like it would pop. I realized I had done too much but it was too late. I drank water and activated charcoal to quell the burn in my throat but I knew it would be a long night. I decided I should probably stay up late and wake up later to allow my body time to digest before laying down. It was already 8 pm so I decided to shower. Maybe some movement would help. After my shower, I was so relaxed and so tired. I could not think to stay up a minute longer. I managed to stay up until 11 pm though working on a project for work. By the time I layed down, the burning in my throat was coming back and again I was feeling regret for eating too much.
The next day, I woke up and decided I could not abuse myself like that any longer. I dug up all my raw recipes and vowed to increase my raw consumption and consume less cooked foods, like one cooked meal a day. Even if it’s late and I want to eat, it has to be a raw meal so it digests quickly and comes packed with it’s own enzymes to break itself down. I’ve been in digestive comfort sticking to that plan. Remembering constant pain and discomfort of acid burning my throat and thinking of potentially ending up like my college professor’s colleague with stomach cancer who had to cut out his stomach and half his esophagus, it was easy to stay on the raw path.
You can log your food online or on your notes app. You can create a food journal but what motivates me to eat raw is how it makes me feel.
Sure, in the beginning, it’s about the nutrition knowledge. You’re like “huh, this makes absolute sense.”
Then, you connect with other raw vegans and see how they are doing it and you keep hanging with those people, it rubs off on you. You get recipe and recipe book recommendations and you give it a try. Soon, you start to put your own roster together of raw vegan dishes you love that become staples.
