Ingredients:
- 1/4 cup sunflower seeds (soaked in water for at least 2 hours and drained)
- 1 tablespoon tahini
- 1 tablespoon apple cider vinegar
- 2 tablespoons water (adjust for desired consistency)
- 1 teaspoon fresh parsley, chopped
- 1 teaspoon fresh tarragon, chopped (or 1/4 teaspoon dried tarragon)
- 1 teaspoon fresh chives, chopped
- 1 small garlic clove, minced
- Salt and pepper to taste
Instructions:
- Blend Sunflower Seeds: In a blender, combine the soaked and drained sunflower seeds, tahini, apple cider vinegar, and water. Blend until smooth and creamy, adding more water if needed to achieve the desired consistency.
- Add Herbs and Garlic: Add the chopped parsley, tarragon, chives, and minced garlic to the blender. Blend briefly to combine.
- Season: Season with salt and pepper to taste, blending again to mix.
- Serve: Serve immediately or refrigerate for up to 3 days.
