We often sprinkle spices into our meals for their incredible flavor and profound metabolic health benefits. However, to keep commercial spices shelf-stable and free of foodborne pathogens, the food industry frequently subjects them to a controversial preservation method: irradiation.
If you are trying to optimize your diet for brain and metabolic health, here is what you need to know about what irradiated spices are, how the process impacts your health, and how to avoid them if you choose to.
What Does “Irradiated” Mean?
Food irradiation is a processing technique that exposes food, like herbs, spices, and vegetable seasonings, to high doses of ionising radiation, such as gamma rays. The primary goal of this process is to improve microbial safety by destroying harmful bacteria that cause food poisoning, such as Salmonella and Campylobacter.
While the word “radiation” sounds alarming, it is important to clarify that irradiating food does not make the food itself radioactive. Instead, the intense energy passes through the food to break the DNA of any contaminating pests or microorganisms, effectively neutralizing them.
How Irradiation Affects Health
When evaluating the health impacts of irradiated spices, the science shows a complex picture of both benefits and drawbacks:
- It Destroys Fragile Vitamins
When spices are exposed to high doses of ionising radiation, their chemical composition changes. While macronutrients remain largely intact, fragile micronutrients are highly sensitive to the process. Studies show that irradiation can reduce vitamin E levels by up to 25% and vitamin C by 5% to 10%. As radiation doses and storage times increase, these vitamins continue to degrade, which leads critics to warn that heavily irradiated and stored foods may offer little more than “empty calories”.
- It Actually Preserves (and Sometimes Boosts) Antioxidants
Interestingly, the news isn’t all bad for your metabolic health. The main reason we eat spices is for their rich concentrations of polyphenols and flavonoids, which fight neuroinflammation. Research evaluating gamma-irradiated spices (like clove, grains of paradise, and Ethiopian pepper) found that irradiation does not compromise their innate phytochemical stability. In some cases, irradiation can even increase the antioxidant activity in spices by degrading high-molecular-weight compounds, releasing additional beneficial phenolic compounds into the body.
- Creation of Toxic By-Products
The most significant health concern regarding irradiation is the formation of radiolytic by-products. When radiation alters the chemical structure of the food, it creates new, unnatural chemical compounds. Very few of these chemicals have been adequately studied for long-term human toxicity, but one such by-product, a chemical called 2-DCB, has been shown to cause DNA damage in rat colon cells when administered at high doses. Furthermore, while irradiation kills live bacteria, it cannot inactivate dangerous toxins that those bacteria may have already produced in the food prior to treatment.
- The “Clean Dirt” Problem
From a public health perspective, consumer advocacy groups warn that irradiation is often used as a “quick fix” to mask incredibly poor hygiene practices in the food industry. Because irradiation can sterilize a contaminated batch of spices at the end of the production line, it removes the incentive for companies to clean up sloppy, unhygienic agricultural and manufacturing practices, leaving consumers to unknowingly ingest “clean dirt”.
How to Avoid Irradiated Spices
The European Food Safety Authority (EFSA) maintains that there are no microbiological risks to consumers from irradiated foods. However, if you are concerned about nutrient loss, chemical by-products, or supporting poor agricultural practices, here is how you can easily avoid them:
- Read the Labels Carefully: In the European Union and many other regions, foods or ingredients that have been treated with radiation must be legally labelled with terms like “irradiated” or “treated with ionising radiation”. Be vigilant, as there are ongoing industry efforts to substitute the word “irradiation” with far more innocent-sounding terms like “cold pasteurisation” to avoid consumer pushback.
- Buy Certified Organic: Organic food standards generally prohibit the use of ionising radiation. Purchasing spices from trusted, certified organic brands is one of the safest ways to ensure your seasonings have not been subjected to gamma rays.
- Grind Your Own Spices: To bypass commercial processing entirely, which also helps you avoid the risk of heavy metal adulteration (like lead chromate) found in some commercial powders, purchase whole, dry roots or seeds (such as whole turmeric root, cumin seeds, or coriander seeds) and grind them yourself at home. Not only is this safer, but freshly ground spices contain far more potent, volatile flavor compounds and active phytochemicals.
